Lutfisk Recipe

Buy one lb. of prepared Lutfisk from Scott's Thriftway

About 4 qts. water

1/3 C. salt

Soak Lutfisk in cold water until ready to cook. Drain it into a square of cheese cloth and tie into a loose bag to allow for swelling. Drop into a large kettle of salted boiling water. Cook ten minutes after it returns to a boil. Pull up sack of fish and drain.  Lift pieces of fish to serving platter and garnish with parsley. With this, serve a rich white sauce gravy topped with a ball of butter.

Mustard Sauce: 1 T. Dry mustard 1/2 C Milk

Prepare an hour ahead of time. It will thicken.  If too thick, thin with more milk to make it creamy.
